Description
The dish was originally written by Auguste Gusteau. He said it was a disaster and was never served to customers.
Ingredients
The recipie calls for sweetbread cooked in a seaweed salt crust
- With cuttlefish tentacle,
- Dog rose puree
- Geoduck egg
- Dried white fungus
- Anchovy licorice sauce
- Soaked veal stomach.

History
When the customers ask Mustafa, a waiter if Gusteau's has anything new, he panics and tells the kitchen crew of the request. Chef Skinner is shocked to learn from Mustafa that the customers want specifically want something new and off menu. Skinner out of spite, deceives Linguini into cooking one of Gusteau's failed recipes, Sweetbread a la Gusteau. Fortunately, Remy improved it by replacing the Anchovey licorice sauce as it went out the door. Mustafa returns greatly excited, the customers love the food and now all want the same dish.
